Tomato and caper salad
I love to make this recipe especially when tomatoes are in season and particularly if you have tomatoes growing in your garden.
This tomato salad is really simple and super quick that it can be whipped up in under ten minutes and is beautiful to have as any side dish at dinner time or on a BBQ.
What goes well alongside this dish?
This salad is a perfect side dish to any accompany white fish, chicken, meat or simply on its own for a light lunch served with fresh bread
Tomato and caper salad
Ingredients
- 3 medium vine tomatoes, sliced
- 1 small red onion, halved and thinly sliced
- 2 tsp capers, drained
- 1 tsp red wine vinegar
- Pinch caster sugar
- 4 tsp olive oil
- Flat parsley, chopped and sprinkled on top (optional0
Instructions
- On a serving plate, place the tomatoes and sprinkle with onion.
- In a small bowl add the capers, red wine vinegar, caster sugar and olive oil and mix thoroughly together.
- Drizzle the oil mixture over the tomatoes and onion.
- Sprinkle parsley and serve
