Tuna crunch melt

This grilled tuna melt is filled with tuna, crunchy peppers, onions and cheese mixed with mayo and warmed up in the grilled makes a perfect for lunch.

Ingredients
  

  • 4 slices of bread
  • 160 g tuna in olive oil
  • tbsp mayonnaise
  • ¼ red pepper, finely chopped
  • ¼ small onion, finely chopped
  • 40 g grated cheddar
  • pinch of pepper

Instructions
 

  • Preheat the grill and toast the slices of bread on one side.
  • In a bowl add the tuna, mayo, red pepper, onion, half of the cheddar and pepper and mix together.
  • Spread evenly over the toast and top with remaining cheddar.
  • Grill for a few mins until the cheese has melted and serve immediately.
