Chocolate chip cookies

These chocolate chip cookies are so tasty and smell amazing when they have just been baked.  You can store these in an airtight tin and still taste great the next day.

Ingredients
  

  • 225 g salted butter, softened
  • 150 g granulated sugar
  • 150 g soft light brown sugar
  • 2 large eggs, light beaten
  • tsp vanilla extract
  • 300 g plain flour
  • 1 tsp bicarbonate of soda
  • 100 g chocolate chips (white, milk or dark chocolate)

Instructions
 

  • Preheat the oven to 190ºc / Gas 5 and line 2 baking trays with baking paper.
  • In a large mixing bowl, with an electric whisk mix together the butter and both sugars until smooth and creamy.
  • Gradually add the eggs to the butter until all combined.  Then mix in the vanilla extract and stir.
  • In a separate bowl, combine the flour and bicarbonate of soda.
  • Gradually add the flour to the egg mixture and beat well.  Once all combined add the chocolate chips.  Top tip: if you find the mixture is very soft, cover and chill in the fridge for 30mins.
  • You will need to bake these in a few batches. Drop a teaspoon of dough onto the trays, spacing well apart as they will spread and bake in the oven for 10 – 12mins until golden at the edges.  Cool for 5mins, then transfer to a wire rack to cool completely.

Top tip:

  • As you're cooking in batches, if the oven is getting too hot, turn down by 10° to 180°c or reduce the cooking time to 8-9mins.
