Chocolate chip cookies
Ingredients
- 225 g salted butter, softened
- 150 g granulated sugar
- 150 g soft light brown sugar
- 2 large eggs, light beaten
- 1½ tsp vanilla extract
- 300 g plain flour
- 1 tsp bicarbonate of soda
- 100 g chocolate chips (white, milk or dark chocolate)
Instructions
- Preheat the oven to 190ºc / Gas 5 and line 2 baking trays with baking paper.
- In a large mixing bowl, with an electric whisk mix together the butter and both sugars until smooth and creamy.
- Gradually add the eggs to the butter until all combined. Then mix in the vanilla extract and stir.
- In a separate bowl, combine the flour and bicarbonate of soda.
- Gradually add the flour to the egg mixture and beat well. Once all combined add the chocolate chips. Top tip: if you find the mixture is very soft, cover and chill in the fridge for 30mins.
- You will need to bake these in a few batches. Drop a teaspoon of dough onto the trays, spacing well apart as they will spread and bake in the oven for 10 – 12mins until golden at the edges. Cool for 5mins, then transfer to a wire rack to cool completely.
Top tip:
- As you're cooking in batches, if the oven is getting too hot, turn down by 10° to 180°c or reduce the cooking time to 8-9mins.
