Tomato and caper salad

Ingredients
  

  • 3 medium vine tomatoes, sliced
  • 1 small red onion, halved and thinly sliced
  • 2 tsp capers, drained
  • 1 tsp red wine vinegar
  • Pinch caster sugar
  • 4 tsp olive oil
  • Flat parsley, chopped and sprinkled on top (optional0

Instructions
 

  • On a serving plate, place the tomatoes and sprinkle with onion.
  • In a small bowl add the capers, red wine vinegar, caster sugar and olive oil and mix thoroughly together.
  • Drizzle the oil mixture over the tomatoes and onion.
  • Sprinkle parsley and serve
