Spicy chicken wings

These delicious chicken wings are coated in a sticky, spicy glaze and are great eaten hot or cold.

Ingredients
  

  • 1 kg chicken wings
  • 2 eggs, beaten
  • 100 g plain flour, seasoned with ground pepper
  • 4 tbsp olive oil

Sticky glaze

  • 1 tbsp dark brown sugar
  • 1 tbsp clear honey
  • 1 tbsp white wine vinegar
  • dash of tabasco sauce
  • 1 tbsp worcester sauce
  • 2 tbsp tomato puree (or ketchup)

Instructions
 

  • Preheat the oven to 190ºc / 375ºf / Gas 5.  With a sharp knife, cut the wings at the first joint into two pieces, discarding the wing tips if present and any loose chicken skin.
  • Grease two large baking trays with half the olive oil.
  • In two separate bowls, add the beaten eggs into one and the seasoned flour into the other.
  • Dip each piece into the egg and then into the flour, shaking off any excess flour and place on the prepared baking tray and repeat until all coated.
  • Drizzle the last of the oil over the chicken and cook in the oven for 30mins, or until cook through.  Turning over after 15mins.
  • In the meantime, mix all the sauce ingredients together and set aside.
  • Remove the chicken from the oven, pour the mixture over the chicken and turn the pieces so that they are all fully coated with the sauce.  Return to the oven and cook for a futher 5-7mins.
  • Transfer the wings to a plate and serve, hot or cold.
