Cajun chicken drumsticks
Ingredients
- 8 chicken drumsticks
- 2 tbsp vegetable oil
- 5 tbsp plain flour
- 1 tbsp cajun seasoning
- 1 tsp cayenne pepper
- ¼ tsp ground black pepper
- ¼ tsp salt
Instructions
- Preheat the oven to 20°c / gas 7.
- Place the flour, cajun seasoning, cayenne pepper, salt and pepper in a bowl, mix together and set aside.
- With a pastry brush, brush each of the chicken drumsticks with oil, then toss each drumstick in the flour mix until coated all over. Place on a wire rack on a baking tray and cook in the oven for 35-45 mins, until cooked through and the skin is crispy.
- Serve either hot or cold.
