Cajun chicken drumsticks

Ingredients
  

  • 8 chicken drumsticks
  • 2 tbsp vegetable oil
  • 5 tbsp plain flour
  • 1 tbsp cajun seasoning
  • 1 tsp cayenne pepper
  • ¼ tsp ground black pepper
  • ¼ tsp salt

Instructions
 

  • Preheat the oven to 20°c / gas 7.
  • Place the flour, cajun seasoning, cayenne pepper, salt and pepper in a bowl, mix together and set aside.
  • With a pastry brush, brush each of the chicken drumsticks with oil, then toss each drumstick in the flour mix until coated all over. Place on a wire rack on a baking tray and cook in the oven for 35-45 mins, until cooked through and the skin is crispy.
  • Serve either hot or cold.
