Garlic and herb pasta

Simple yet impressive, this tasty pasta is ideal for a quick midweek dinner.

A simple side salad and garlic bread goes really well. You use this dish as a side alongside some grilled chicken.

Garlic and herb pasta

Ingredients
  

  • 450 g penne pasta
  • 6 tbsp olive oil
  • 1 tsp garlic paste
  • 1 red chilli pepper, de-seeded and finely chopped
  • ½ tbsp oregano
  • ½ tbsp parsley
  • ½ tbsp basil
  • pinch of salt and pepper
  • grated cheese, sprinkled on top parmesan or your favourite cheddar

Instructions
 

  • Cook the pasta according to packet instructions and drain well and tip back into the pan.
  • Meanwhile, in a small saucepan, heat the oil and add the garlic and chilli. Cook for 1-2mins, until the garlic is fragrant, stir in the herbs and season well.
  • Tip the oil into the pasta and toss well so all the pasta is coated in oil. Serve hot, sprinkled with grated cheese.
