Overnight oats

I’ve tried a few recipes for overnight oats, some have been too bland and others are just far too sweet. So I’ve adapted my own recipe which is simple, healthy and I love to make the night before, when I know when I know I’m going to have a busy morning.

This is also good to make if you’re on the go and want to take breakfast with you. 

Overnight oats

Course Breakfast
Servings 2 servings

Ingredients
  

  • 80 g porridge oats
  • 250 ml almond milk
  • 120 g flavoured yoghurt
  • 1 tbsp maple syrup

Toppings

  • handful of fruit scattered on top (fresh or frozen – see top tip)
  • nuts and seeds

Instructions
 

  • In an airtight container, add the oats, milk, yogurt and syrup together and stir until all combined.
  • Place in the fridge overnight.
  • When ready to serve, give your oats a good stir and tip half into a bowl and top with your fruit.

Top tip:

  • You can use frozen fruit, I tend to take a handful out the night before so it's defrosted in time as you don't want to be biting into frozen fruit.
