Cranberry biscuits

These biscuits have a festive feel to them with the gentle hint of mixed spice.

Ingredients
  

  • 175 g plain flour
  • 1 tsp mixed spice
  • 125 g salted butter, cut into bite size chunks
  • 125 g caster sugar
  • ½ tsp lemon extract
  • 75 g dried cranberries
  • 1 egg, lightly beaten

Instructions
 

  • In a large bowl add the flour and mixed spice. Add the butter and rub it in with your fingertips. Stir in the sugar, lemon extract and cranberries, then add the egg and mix to a firm dough.
  • On a slightly floured surface, knead the dough briefly and shape into a sausage about 20cm long and 5cm wide.
  • Wrap in cling film and chill in the fridge for an hour.
  • Preheat the oven to 180°c/Gas 4. Line 2 baking trays with parchment paper. Unwrap the chilled dough and cut into 5cm thick slices. Put them on the baking trays, spaced a little apart.
  • Bake in the oven for around 15-18 mins, until they are pale golden. Place on a wire rack to cool. Store in an airtight container.
