Posh chicken burger
This open chicken burger on ciabatta is such a lovely change from the usual bun‑and‑burger combo. Tender, well‑seasoned chicken sits on toasted ciabatta with sweet chilli mayo, making it a fresh, satisfying meal that still feels wonderfully comforting.
If you fancy something a little lighter but still full of flavour, this is ideal — the rustic toasted ciabatta keeps it feeling vibrant, the chicken stays juicy, and you can pile on as many toppings as you like.

Posh chicken burger
Ingredients
- 4 boneless chicken breasts (2 halved horizontally)
- ground pepper
- zest of 1 lime
- 2 ciabatta's, sliced through the middle
- 1 tbsp olive oil
- light mayonnaise
- sweet chilli sauce
- lettuce
Instructions
- Preheat the oven to 200°c / gas 6. Place the chicken breasts on a baking tray, season with black pepper and sprinkle over the lime juice and 1 tbsp water. Cover with foil and roast for 20mins until the chicken is cooked through.
- Meanwhile, cut the ciabatta in down the middle. Brush with the oil and warm under the grill.
- Top with sweet chilli sauce, mayonnaise, lettuce leaves. Slice the chicken and arrange on top
- Serve immediately with some fries or wedges, salad and coleslaw.
