When are these roasted new potatoes good to be served with?

I love serving these alongside cheesy cod gratin or Mexican chilli chicken —they’re such a reliable, crowd‑pleasing side. They go with absolutely anything, from easy weeknight dinners to full Sunday roasts, and they deliver maximum flavour for minimal effort.

Ingredients
  

  • 1 kg small new potatoes
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 tsp sea salt, crushed

Instructions
 

  • Preheat the oven to 220ºc/425ºf/Gas 7. 
  • Bring a large saucepan of salted water to the boil then add the potatoes for around 10mins and drain well.
  • Add the potatoes to a baking tray, cover with olive oil and cook in the oven for 45mins, turning over half way through until golden and crispy.
  • Remove the potatoes from the oven and add the garlic, tossing the potatoes around so they are coated all over in the garlic and oil.  Season with the crushed salt and serve hot.
