Spicy tomato pasta

This simple spicy tomato pasta is very quick and and easy to make. It’s so versatile you can eat it as it is or add cooking chicken, tinned tuna or evenly thinly sliced steak. Can be eaten hot or cold, as a main dish or as a side with your bbq.

Ingredients
  

  • 200 g dried pasta
  • 1 tbsp olive oil
  • ½ onion, finely chopped
  • ½ tsp garlic paste
  • ¼-½ tsp chipotle chilli flakes
  • 200 g passata
  • ½ tsp oregano
  • ¼ tsp caster sugar
  • Season with salt and pepper

Instructions
 

  • Add the pasta to a pan of boiling salted water and cook as per packet instructions. Drain and set aside.
  • In a saucepan add the olive oil, onions and garlic and gently cook until the onions become soft.
  • Add the chipotle chilli flakes and stir for another minute.
  • Add the passata and oregano and cook on a low heat for another 5mins. Add the sugar, salt and pepper and stir together.
  • Add the pasta to combine and then serve.

Other serving suggestions

  • Add grated cheese on top and serve along with some warm French bread.
  • Add cooked chicken (shredded or cubed) at the end and serve hot or cold.
  • Add thinly sliced steak or alongside a perfectly grilled steak or fish.
  • As a side with your BBQ or a large bowl at a party served cold.
  • Add a tin of tuna at the end and cook to warm through.
