Chocolate orange brownies

These are the best brownies I’ve ever made.  They are so moist, very gooey with a crunchy top.  The orange flavouring isn’t over powering so they are just perfect.

Ingredients
  

  • 150 g dark chocolate
  • 150 g terry's chocolate orange – if a segment doesn't make it to bowl, it's not a problem!
  • 200 g unsalted butter
  • 3 eggs
  • 275 g caster sugar
  • 100 g plain flour
  • ½ tsp baking powder
  • 3 tbsp cocoa powder
  • 1 tsp orange extract

Instructions
 

  • Preheat the oven to 180ºc and line a 9" square baking tray and line with baking paper.
  • Melt together the butter, dark chocolate and the terry's chocolate orange in a heatproof bowl over a pan of boiling water.  Leave to one side to cool to room temperature.
  • Using an electric whisk, whisk together the eggs and caster sugar for a few mins until the colour has turned pale and is double the original volume.  You will know when it's done as when you lift the whisk out it should leave a trail for a couple of seconds before disappearing.
  • When whisked, gradually pour the cooled chocolate mix over the  eggs and fold together carefully.  Be careful not to knock out the air you made from whisking, and check that it's all mixed together as the chocolate can sink to the bottom of the bowl.
  • Once completely combined, sift the cocoa powder, baking powder and plain flour on top of the chocolate mix, add the orange flavouring and then fold together again.
  • Pour into the tin, bake in the oven for 30mins.  Once baked, leave to cool in the tin completely.
  • Once cooled, remove from the tin and cut into squares and serve with a scoop of vanilla ice-cream.
