Red cabbage salad
Ingredients
- ¼ red cabbage, finely chopped
- 1 tomato, chopped
- ¼ small onion, finely chopped
- small handful of fresh parsley, chopped
Dressing
- 1½ tbsp olive oil
- ½ tbsp cider vinegar
- 1 tsp red wine vinegar
- generous pinch of salt and pepper
Instructions
- In a bowl add the cabbage, tomato and onion.
- Add all the dressing ingredients and combine together.
- Add the chopped parsley and keep in the fridge until your ready to use.
