Ingredients
  

  • 1 egg, lightly beaten
  • 2 chicken breasts, butterflied to create 4 breasts
  • 4 tbsp plain flour
  • tbsp cajun seasoning
  • 1 tsp cayenne pepper
  • 4 brioche burger buns

Instructions
 

  • Preheat the oven to 200c
  • In a shallow dish, add the lightly beaten egg. In a separate shallow dish, mix together the flour, cajun seasoning and cayenne pepper.
  • Then dip one piece of chicken in the egg and then into the flour mixture, coating evenly and shaking of any excess flour. Place on a wire rack and repeat with the remaining chicken pieces.
  • Place the wire rack on a baking tray and bake in the oven for around 15mins. Turn the chicken pieces over and cook for a further 15mins, until the chicken is cooked, remove from the oven and keep warm.
  • Just before you remove the chicken from the oven, cut the burger buns in half and place under a hot grill to toast for a few mins or until lightly golden.
  • Remove the buns from the grill, place the chicken on one half of the bun, add some salad, your favourite sauce (I like mine with sweet chilli sauce and mayo) and even top with some square cheese and serve immediately with some fries on the side.
