Coconut and oat anzac biscuits
These tasty chewy biscuits are very hard to resist, especially when they just come out of the oven, they smell amazing!

Coconut and oat anzac biscuits
Ingredients
- 150 g plain flour
- 150 g caster sugar
- 90 g desiccated coconut
- 90 g rolled oats
- 110 g margarine
- 3 tbsp golden syrup
- ½ tsp bicarbonate of soda
Instructions
- Preheat the oven to 180°c / Gas 4. Line 2 baking trays with baking paper and set aside.
- In a large bowl add the flour, sugar, coconut and oats.
- Put the margarine and golden syrup in a small saucepan and over a low heat stir until all melted.
- Put the bicarbonate of soda in a small bowl with 1 tbsp of boiling water and mix well. Stir this into the syrup mixture – it will foam and froth. Add this to the dry ingredients and stir until all combined.
- Arrange tablespoons of dough on the trays, leaving a space between them to allow for spreading. Lightly press down to flatten slightly, then bake in the oven for around 16-18 mins.
Top tip:
- Alter the baking time to your taste. If you prefer them crunchy, then bake for a couple of mins longer.
