Preheat the oven to 180°c / Gas 4. Line 2 baking trays with baking paper and set aside.
In a large bowl add the flour, sugar, coconut and oats.
Put the margarine and golden syrup in a small saucepan and over a low heat stir until all melted.
Put the bicarbonate of soda in a small bowl with 1 tbsp of boiling water and mix well. Stir this into the syrup mixture - it will foam and froth. Add this to the dry ingredients and stir until all combined.
Arrange tablespoons of dough on the trays, leaving a space between them to allow for spreading. Lightly press down to flatten slightly, then bake in the oven for around 16-18 mins.
Top tip:
Alter the baking time to your taste. If you prefer them crunchy, then bake for a couple of mins longer.
