Caramel sponge slices
These moist caramel slices have a hint of spice, perfect with with a coffee
Caramel sponge slices
Ingredients
- 100 g margarine
- 100 g soft light brown sugar
- 75 g wholemeal self raising flour
- 50 g self raising flour
- 1 tsp baking powder
- ½ tsp ground cinnamon
- 2 eggs
- 1 tbsp milk
- 1 tbsp golden syrup
For the topping
- 175 g golden icing sugar
- 50 g unsalted butter, softened
- 1 tbsp milk
- strawberries, sliced to decorate or other berries scattered on top
Instructions
- Preheat the oven to 180°c / gas 4. Grease a tin and set aside.
- In a large mixing bowl, add all the cake ingredients and with an electrix mixer, mix all the ingredients until smooth.
- Spoon the mixture into the tin and level the top. Bake in the oven for 20-25 mints until the cake is bounces bake when gently pressed in the middle.
- Leave to cool for 5 mins, then turn out onto a wire rack to cool completely.
- For the icing, beat the butter until smooth, then gradually add the icing sugar and milk, beat together until smooth.
- Swirl the icing all over the cake, cut into slices and top with sliced strawberries.
