Caramel sponge slices

Ingredients
  

  • 100 g margarine
  • 100 g soft light brown sugar
  • 75 g wholemeal self raising flour
  • 50 g self raising flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • 2 eggs
  • 1 tbsp milk
  • 1 tbsp golden syrup

For the topping

  • 175 g golden icing sugar
  • 50 g unsalted butter, softened
  • 1 tbsp milk
  • strawberries, sliced to decorate or other berries scattered on top

Instructions
 

  • Preheat the oven to 180°c / gas 4. Grease a tin and set aside.
  • In a large mixing bowl, add all the cake ingredients and with an electrix mixer, mix all the ingredients until smooth.
  • Spoon the mixture into the tin and level the top. Bake in the oven for 20-25 mints until the cake is bounces bake when gently pressed in the middle.
  • Leave to cool for 5 mins, then turn out onto a wire rack to cool completely.
  • For the icing, beat the butter until smooth, then gradually add the icing sugar and milk, beat together until smooth.
  • Swirl the icing all over the cake, cut into slices and top with sliced strawberries.
