Tomato, onion and basil bruschetta

These bread slices toasted in olive oil, topped with fresh tomato, onion salad are so tasty and refreshing, perfect for lunch or as a starter for any dinner party.

What else can you pop on top of these toasted slices?

How about some smashed avocado spread across the base, topped with the tomato salad. Or instead of tomatoes, lighly fry some sliced mushrooms with some chopped garlic in a little olive oil, add some parsley, stir together and pop on top.

Tomato, onion and basil bruschetta

Ingredients
  

  • 1 ciabatta or baguette, sliced
  • 2 tbsp olive oil
  • 1-2 garlic cloves, peeled
  • 3 tomatoes, roughly chopped
  • ¼ small red onion, finely chopped
  • 3 tbsp fresh basil, chopped
  • ¼ tsp dried oregano
  • pinch of salt and pepper
  • whole basil leaves to garish

Instructions
 

  • Preheat the grill to hot. Toast one side of the bread for around 2-3 mins, or until golden.
  • Brush a little of the olive oil in the untoasted side of each slice, then toast for another 2 mins, or until golden and remove from the grill.
  • Rub the garlic clove over the oiled side of each slice of toast and arrange on a serving plate.
  • Put the remaining oil in a bow with the tomatoes, basil, oregano and stir well.
  • Season with salt and pepper
  • Divide the tomato mixture among the toast slices, garnish with basil and serve immediately.
