Ingredients

ciabatta or baguette, sliced

olive oil
1-2
garlic cloves, peeled

tomatoes, roughly chopped

small red onion, finely chopped

tbsp
fresh basil, chopped

tsp
dried oregano
pinch of salt and pepper
whole basil leaves to garnish
Instructions
Preheat the grill to hot. Toast one side of the bread for around 2-3 mins, or until golden.
Brush a little of the olive oil in the untoasted side of each slice, then toast for another 2 mins, or until golden and remove from the grill.
Rub the garlic clove over the oiled side of each slice of toast and arrange on a serving plate.
Put the remaining oil in a bowl with the tomatoes, onion, basil, oregano and stir well.
Season with salt and pepper.
Divide the tomato mixture among the toast slices, garnish with basil and serve immediately.
