Caprese sourdough

Caprese sourdough
Ingredients
- 4 large slices of sourdough bread
- 2½ tbsp sun-dried tomato paste
- 1½ tbsp cream cheese
- ½ tsp garlic paste
- bunch fresh basil, finely chopped
- 1 avocado, peeling and mashed
- 2 large vine tomatoes, sliced
- 1 ball of mozzarella, diced
- balsamic vinegar
Instructions
- Pre-heat the grill and toast the sourdough on both sides. Remove from the grill.
- Mix the sun-dried tomato paste, cream cheese, garlic and basil in a bowl. Spread this of the toast.
- Place the sliced tomatoes on top, gentle place the smash avocado on top, with mozarrella scattered over the top.
- Place back under the grill for around 5mins until the cheese melts and turns a little golden.
- Remove from the grill, scatter with some extra basil and drizzle some balsamic over the top.
- Serve immediately with a cuppa tea.
