Sweetcorn Salad
Ingredients
- 2 cups sweetcorn – fresh or canned
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ¼ cup red onion, finely diced
- 1 handful fresh coriander, chopped
- 1 juice of lime
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 red chill or jalapeño, finely chopped (optional)
Instructions
- Combine sweetcorn, cucumber, tomatoes, red onion and coriander in a large bowl.
- Whisk lime juice, olive oil, salt and pepper in a small jug.
- Pour the dressing over the salad and toss gently to coat.
- If using, add red chilli / jalapeño if you want to add a little heat.
- Taste and adjust seasoning, then chill for 10 minutes before serving.
