Easy Garlic Aioli

Jump to Recipe

There’s something wonderfully simple about a good garlic aioli — that silky, garlicky spoonful that instantly lifts even the most everyday meal. Inspired by the classic Mediterranean sauce, this version keeps things easy for busy weeknights while still delivering all the flavour you’d expect from a homemade dip. It’s rich, creamy and beautifully punchy, perfect for drizzling over roasted vegetables, spreading into sandwiches or serving alongside crisp potatoes and grilled meats. Once you’ve made it once, you’ll find yourself whisking up a jar whenever you want to add a little sunshine to your table.

Serving Suggestions for Garlic Aioli

  • With Crispy Potatoes — Spoon generously over hot chips, wedges or roasted baby potatoes for an easy, crowd‑pleasing side.
  • As a Sandwich Spread — Add a thin layer to chicken, tuna or roasted veg sandwiches for instant richness and flavour.
  • Drizzled Over Roasted Vegetables — Perfect with carrots, courgettes, peppers or a tray of mixed Mediterranean veg.
  • Alongside Grilled Meats or Fish — Serve with grilled chicken, salmon, prawns or steak for a simple, sunny sauce.
  • As a Dip for Crudités — Pair with crunchy carrots, cucumber, radishes and cherry tomatoes for a fresh starter.
  • With Burgers — Swap out your usual mayo for a garlicky upgrade that works beautifully with beef, chicken or veggie burgers.
  • On Tacos or Wraps — A small drizzle adds creaminess and balance to spicy fillings.
  • With Fried or Breaded Foods — Ideal for calamari, fish goujons, halloumi fries or crispy chicken strips

Notes & Tips

  • Use fresh garlic for the best flavour — older cloves can taste sharp or bitter once mixed into the sauce.
  • Finely mince or grate the garlic to avoid any harsh chunks; a microplane gives the smoothest result.
  • Adjust the garlic to taste — start with one clove and add more if you prefer a punchier aioli.
  • Thin the sauce with water or lemon juice if it becomes too thick; add a teaspoon at a time.
  • Chill before serving — 20–30 minutes in the fridge helps the flavours mellow and deepen.
  • Swap lemon for vinegar if you prefer a sharper, more traditional Mediterranean finish.
  • Add herbs for variation — parsley, chives, dill or basil all work beautifully.
  • Turn it into a dip by stirring in a spoonful of Greek yoghurt for extra creaminess.
  • Store in an airtight container and keep refrigerated for up to 1 week if made with shop‑bought mayo.
  • Avoid metal bowls when mixing; glass or ceramic helps keep the flavour clean
