Sausage, egg and cheese muffin

Ingredients
  

  • vegetable oil or spray oil
  • 6 pork sausages, skinned
  • 1 tsp dried sage
  • 4 eggs, beaten together
  • 4 square cheese
  • 4 muffins, sliced

Instructions
 

  • In a bowl add the sausages and sage and using your hand squeeze together to combine. With damp hands, divide the sausage mix into 4 equal balls and flatten slightly to a pattie and set aside.
  • Heat some oil in a frying pan on a medium heat, add the sausage patties and fry for around 5mins on each side until the sausages are cooked and keep warm.
  • Add another dash of oil, place 4 egg rings in the pan and slowly pour the mixed eggs into the rings, when they have nearly cooked, gently remove the ring and flip over to cook on the other side, you may need to use a knife to ease away from the ring.
  • Meanwhile place the muffins under a grill on a medium heat until lightly toasted, place the sausage patties on top of one of the halves with a slice of square cheese for around 30 seconds, remove add the cooked eggs, a dollop of ketchup or brown sauce, place the other half of the muffin on top and serve immediately with a hashbrown and a cuppa tea .
