Ingredients
  

  • ¼ red cabbage, finely chopped
  • 1 tomato, chopped
  • ¼ small onion, finely chopped
  • small handful of fresh parsley, chopped

Dressing

  • tbsp olive oil
  • ½ tbsp cider vinegar
  • 1 tsp red wine vinegar
  • generous pinch of salt and pepper

Instructions
 

  • In a bowl add the cabbage, tomato and onion.
  • Add all the dressing ingredients and combine together.
  • Add the chopped parsley and keep in the fridge until your ready to use.
