Ingredients
  

  • 1 cups fresh pineapple finely diced
  • ½ red pepper diced
  • 1/2 small red onion finely diced
  • 1 small red chilli or a jalapeño seeded and minced (optional for heat)
  • 1 handful fresh coriander chopped
  • ½ lime juiced
  • large pinch of fine salt
  • small pinch black pepper

Instructions
 

  • Combine pineapple, red pepper, red onion, chilli and coriander in a mixing bowl.
  • Add lime juice, salt and pepper, then toss gently to coat.
  • If needed, add more lime for brightness, more salt for balance, or extra chilli for heat.
  • Chill for at least 20 minutes and serve when ready.
