Pineapple Salsa
Ingredients
- 1 cups fresh pineapple finely diced
- ½ red pepper diced
- 1/2 small red onion finely diced
- 1 small red chilli or a jalapeño seeded and minced (optional for heat)
- 1 handful fresh coriander chopped
- ½ lime juiced
- large pinch of fine salt
- small pinch black pepper
Instructions
- Combine pineapple, red pepper, red onion, chilli and coriander in a mixing bowl.
- Add lime juice, salt and pepper, then toss gently to coat.
- If needed, add more lime for brightness, more salt for balance, or extra chilli for heat.
- Chill for at least 20 minutes and serve when ready.
