Spicy potato wedges
Ingredients
- 450 g potatoes, cut into wedges
- 1 tbsp olive oil
- ½ tsp sea salt
- ¼ tsp course ground black pepper
- ½ tsp dried chilli flakes
- ½ tsp paprika
Instructions
- Wash the potatoes and cut into wedges.
- Put the potatoes wedges into a saucepan of salted boiling water, for 5mins, then turn the head off and leave to stand for 5mins covered with a lid.
- Drain the potatoes and leave out in a single layer on a clean tea towel to cool completely.
- Preheat the oven to 220ºc/Gas 7. Grease a baking tray with olive oil and heat in the oven for 5mins.
- Meanwhile, in a small bowl combine the salt, pepper, chilli flakes and paprika.
- Place all the wedges in a mixing bowl, pour over the spices and mix until all covered.
- Tip the potatoes onto the hot baking tray and bake in the oven for 20mins, turning over halfway through. Once crispy and cooked through, serve immediately.
