Preheat the oven to 190°c / gas 5. Line a shallow 13cm x 18cm baking tin with baking paper and set aside.
Over a low heat, melt the butter in a saucepan, without colouring.
In a large bowl, mix together the porridge and sugar and pour the melted butter into the bowl, mix together until all the ingredients are well blended.
Press in to the baking tin and bake for 15mins or until pale and golden in colour.
Remove from the oven and cut into chunks. Leave to cool in the tin so they become lovely and crispy, before turning out.
