In a large mixing bowl, add the chicken, lemon juice, olive oil, garlic, cumin, ground pepper and cayenne pepper and mix together so that the chicken is fully coated, cover with cling film and place in the fridge for at least a couple of hours.
When ready, preheat the grill, george forman, griddle pan or bbq.
Thread the chicken and vegetables onto skewers and cook for around 10-15mins until the chicken if fully cooked, turning frequently to ensure the kebabs are cooked on all sides.
Serve immediately with warm pitta, salad and fries.
