Brush 2 baking trays with oil and set aside.
In a large bowl, add the flour, yeast and salt. Make a well in the centre, pour in the water and oil and with a metal spoon mix together to create a dough.
Turn the dough out onto a lightly floured surface and knead for around 5mins. Divide the dough into 2, place on the baking trays, brush a little oil over the top, cover with cling film and leave to rise for around 30mins.
To make the pizza base, put all the ingredient in a bowl, mix together and set aside.
Once the dough has risen, preheat the oven to 200c / Gas 6.
Roll each dough ball out thinly to form 2 rounds circles. Spread some of the pizza base over the bases, then cover with the toppings of your choice.
Bake in the middle of the oven for 15mins, or until pizza is golden, crisp and cooked through.
